Cochabamba's chicha festival celebrates a fermented-corn drink that valley towns like Tarata, Cliza and Punata have brewed for well over a thousand years, paired almost always with fried pork chicharron. The municipality formalized the pairing in 2021 by declaring a Day of Chicha and Chicharron. Expect chicherias pouring samples of maize beer that ranges from mild to strongly sour, alongside market food stalls and an unhurried, market-day pace.

Corn has fermented into chicha across Bolivia's Cochabamba valleys for more than a millennium, and the towns of Tarata, Cliza, Punata, Arani, San Benito and Aiquile still supply much of what gets poured in the region today.
