Paraty's Festival Gastronômico is a free, theme-driven event tied to the town's 2017 UNESCO Creative City of Gastronomy designation, distinct from its older cachaça festival held later each year. Staged in the colonial historic center around a rotating annual theme chosen fresh each year, it brings together invited chefs, local producers and researchers with a town-wide Roteiro Gastronômico restaurant circuit.

Paraty's UNESCO Creative City of Gastronomy status, awarded in 2017, gave rise to the Festival Gastronômico de Paraty, a distinct event from the town's much older cachaça festival, the Festival da Cachaça, Cultura e Sabores, which has run since 1983 under a separate organizing structure.
