Fiesta del Ajo Chilote in Ancud/Chiloe
In the port town of Ancud, the Fiesta del Ajo Chilote celebrates the archipelago's prized ajo chilote garlic with tastings, market stalls and garlic-forward dishes each February. The event doubles as a genuine agricultural market where local farmers sell braided garlic ropes and seed stock, giving visitors a direct look at a distinctly Chilote crop.
Ancud, the port town near the northern tip of Chiloe island, hosts a food fair each February built around a crop the region takes real pride in: ajo chilote, a large-bulbed garlic variety often tinged purple that local farmers say grows differently in the archipelago's cool, damp soil than garlic grown elsewhere in Chile.
