Fiesta de la Longaniza de Chillan in Chillan

Held over a long weekend each August in downtown Chillan, this festival grew out of a 2016 world-record attempt, a 552-meter longaniza made in the Plaza de Armas, that led to an annual celebration the following year. Now drawing more than 150,000 visitors, it centers on tastings, grilling demonstrations and live music built around Chillan's Denominacion de Origen sausage.

Chillan's Fiesta de la Longaniza traces its roots to a single dish with a documented immigrant history: longaniza, a cured pork sausage established in the area by Eloy Serrano Ubis, a Spanish immigrant from Castilla la Vieja who settled first in Bulnes in 1910 and later founded the Fabrica de Cecinas El Serrano in Chillan in 1920.
