Festival del Cordero Chilote in Chiloe
Chiloe's long sheep-raising tradition takes center stage at the Festival del Cordero Chilote, a summer food fair built around spit-roasted lamb, empanadas and stews served alongside Chilote staples like milcao and native potatoes. Mostly drawing a regional Los Lagos crowd, the event has the working feel of an agricultural fair as much as a tourist attraction.
Sheep have grazed Chiloe's damp, green pastures since the Spanish introduced them in the colonial period, and lamb, cordero, has become one of the archipelago's defining foods alongside curanto and seafood.
