Festival de la Tortilla Corralillo in Corralillo
Originating as an initiative of Corralillo de Nicoya's Colegio Tecnico Profesional to teach students Guanacaste's gastronomic traditions, this festival has run for eleven years bringing together elderly community members and young students around traditional corn-tortilla preparation. Demonstrations of stone-ground, hand-shaped tortilla making run alongside marimba music, folkloric dance and traditional dress each July, timed near Guanacaste's Annexation Day commemorations.
The Festival de la Tortilla in Corralillo de Nicoya began as an initiative of the local Colegio Tecnico Profesional, created specifically to show students the gastronomic traditions of their own Guanacaste community rather than as a purely tourism-oriented event from the outset.
