The story

Festival de la Tortilla Corralillo in Corralillo

Originating as an initiative of Corralillo de Nicoya's Colegio Tecnico Profesional to teach students Guanacaste's gastronomic traditions, this festival has run for eleven years bringing together elderly community members and young students around traditional corn-tortilla preparation. Demonstrations of stone-ground, hand-shaped tortilla making run alongside marimba music, folkloric dance and traditional dress each July, timed near Guanacaste's Annexation Day commemorations.

The Festival de la Tortilla in Corralillo de Nicoya began as an initiative of the local Colegio Tecnico Profesional, created specifically to show students the gastronomic traditions of their own Guanacaste community rather than as a purely tourism-oriented event from the outset.

What is special

The part that makes it specific.

01

The place changes

Few food festivals originate specifically inside a school as a deliberate intergenerational transmission project, pairing elderly community members who remember traditional methods directly with students learning the craft for the first time

02

The mystery stays covered

Its demonstration of fully manual, stone-mortar tortilla preparation, using the same tools and technique as ancestors rather than modern equipment, preserves an artisanal method increasingly rare even within Guanacaste's own corn-growing communities

03

The city starts moving

Timing the festival near Guanacaste's Annexation Day commemorations ties a specific culinary tradition directly to the region's broader civic identity and calendar
