Certamen Comida Tradicional Los Santos in Los Santos
Since 2001, Costa Rica's Ministry of Culture has run a biennial national competition to recover and safeguard traditional cooking knowledge, with the Los Santos edition centered on vigoron, a Tarrazu-canton dish of shredded cabbage, chicharron-style pork and yuca served on a banana leaf, a documented 2020 edition recognizing twelve winning dishes and beverages from the zone.
Since 2001, Costa Rica's Ministry of Culture has run a national program of traditional food and beverage competitions through its Center for Research and Conservation of Cultural Heritage, rotating biennially through regions including Guanacaste, Limon, Puntarenas, Heredia, Alajuela, Cartago and the northern zone, with the Los Santos edition specifically built around the zone's signature vigoron, a dish rooted in the Tarrazu canton combining shredded cabbage, pork prepared similarly to chicharron, and yuca, finished with vinaigrette, chimichurri and chili and traditionally served hot on a banana leaf.
