The story

Subotina Buzet in Buzet

Subotina, held each September in the hilltop town of Buzet, reenacts turn-of-the-century Istrian life through period costume, reopened historical craft workshops and traditional music, climaxing in a giant truffle omelette cooked in a 2.5 metre pan that opens the region's white truffle season. Buzet was proclaimed the City of Truffles in 1999.

Subotina is held on the second Saturday of September in Buzet, a hilltop town in inland Istria that was formally proclaimed the City of Truffles in 1999 in recognition of its position at the center of the region's truffle trade.

What is special

The part that makes it specific.

01

The place changes

The festival's giant truffle omelette, cooked in a pan roughly 2

02

The mystery stays covered

5 metres across using thousands of eggs, doubles as both Subotina's signature culinary spectacle and the symbolic opening ceremony for the wider truffle season across the surrounding Istrian region

03

The city starts moving

Reopened historical workshops, including a working blacksmith, comb-makers and traditional bakeries, let visitors watch and sometimes try trades that otherwise have no active presence anywhere else in the modern town, alongside traditional Istrian music and period folk costume worn by local residents rather than hired performers
