Running since 1997 in New Zealand's southernmost mainland town, the Bluff Oyster and Food Festival is a one-day celebration of fresh Foveaux Strait oysters, marked each May by a ceremonial pipe-in from the Invercargill Highland Pipe Band and a recitation of the Ode to the Oyster.
