Las Palmas, a rural district in Veraguas province, celebrates the pixbae, or peach palm fruit, in a harvest festival honoring a starchy, orange fruit that Panamanians traditionally boil and eat with salt, mayonnaise, or honey, a staple food across much of rural Central America.
The peach palm, known in Panama as pixbae and elsewhere in Latin America as pifa or chontaduro, produces a starchy, orange, egg-shaped fruit that has been cultivated across the tropical Americas since long before European contact, making it one of the region's older domesticated crops.
