In January 2009, two social entrepreneurs, Natalia Nikitina and Elena Dmitrieva, opened a small museum in a wing of the old Suranov merchant estate in Kolomna, dedicated to a confection that had nearly vanished from Russian tables: pastila, a whipped, dried apple puree that predates industrial candy by centuries.
