The Trinidad and Tobago Chocolate Festival is a celebration of the country's fine cocoa heritage, held in Port of Spain, showcasing bean-to-bar chocolate makers, cocoa tastings, and the Trinitario cocoa variety that originated on the islands and is prized internationally as one of the world's finest cocoa flavors.
Long before single-origin and bean-to-bar became marketing terms in specialty chocolate shops abroad, Trinidad had already given the chocolate world one of its most important genetic events: after a blight devastated the island's original Criollo cocoa trees in 1727, the crop that grew back was a natural hybrid with the hardier Forastero variety, producing what is now known worldwide as Trinitario cocoa, prized for combining Criollo's delicate flavor with Forastero's disease resistance.
