The Gilroy Garlic Festival celebrates the crop that made Gilroy famous as the self-declared Garlic Capital of the World, with garlic fries, garlic ice cream, and a cook-off competition. Founded in 1979, the festival was suspended for years after a 2019 mass shooting and pandemic losses before returning in 2025 in a smaller, ticketed format at Gilroy Gardens.
