The Hatch Chile Festival is a Labor Day weekend celebration in Hatch, New Mexico, the small Rio Grande village widely known as the self-declared Chile Capital of the World. Held since 1971, the festival draws tens of thousands of visitors for chile roasting, farm stands, a parade, and live music centered on the harvest of Hatch Valley chile peppers.

The Hatch Valley, a narrow strip of farmland along the Rio Grande in southern New Mexico, has grown chile peppers since Spanish colonial settlement, but it was the twentieth-century combination of irrigation infrastructure, plant breeding at New Mexico State University, and marketing that turned Hatch into a recognized national brand.
