Feria del Puchero Cochabamba in Cochabamba
Feria del Puchero is Cochabamba's dedicated food fair for puchero, the Carnival-season stew of beef, chorizo, cabbage, chuno and a whole peach simmered into the broth, traditionally eaten on the Tuesday after Carnival to recover from days of parades. Vendors set up around the city's plazas and markets, serving the dish from large pots at low prices, making it an easy, informal stop for anyone still in town after the main Carnival weekend.
Cochabamba treats the Tuesday after Carnival as a dedicated day for eating puchero, and Feria del Puchero has grown into an organized food fair built around that custom rather than a spontaneous home-cooking tradition.
