Birjand Saffron Festival in Birjand
The Birjand Saffron Festival celebrates the autumn harvest of South Khorasan province, one of the world's most productive saffron-growing regions within Iran, the country responsible for the vast majority of global saffron output. The festival gathers growers and visitors around the delicate, labor-intensive work of hand-picking crocus flowers and separating their crimson stigmas.
Saffron's price tag has a simple, unglamorous explanation: it takes an enormous number of flowers to produce very little spice.
