Sambra Oilor in Huta Certeze
The National Sambra Oilor Festival is the largest festival in the Tara Oasului region, held each May on a hillside at Huta-Certeze in Satu Mare county. It revives the old shepherd custom of sambra oilor, the annual separating, counting, and milk-measuring of sheep before flocks head to mountain pastures.
In Tara Oasului, a distinct cultural region in Satu Mare county near Romania's northern border, spring has long been marked by a working shepherding practice called sambra oilor: the point in the calendar when shepherds gathered their flocks, separated and counted the sheep, and measured the milk each animal produced before driving the flocks up to mountain pastures for the summer.
